Course length: 1 yr full-time for HNC/2 yrs full-time for HND

If your ideal career is working with animals, this could be the perfect course to get you there. You will learn how to understand and apply business management within the Land Based Sector and how to use project management as well as gaining an understanding of basic evolution, handling techniques, animal welfare requirements and survey management.Units on this course may include the history of land use in the UK, animal behaviour, animal health and nursing, aquatics and fishkeeping, horse husbandry and wildlife management.

Facilities

You will study at our working farm, Wigfield Farm in Worsbrough. With over 60 species of animals on site, including sheep, cattle, pigs, meerkats, rabbits, reptiles and alpacas, the farm provides the perfect real-life learning environment.

Our graduates

Students can continue on to study for a degree in Animal Management or pursue a career in the industry at a management level in a range of jobs, such as Veterinary Nurse, Animal Technician, Animal Welfare Officer or Kennels/Cattery management.

Higher National Diploma (HND) in Catering and Hospitality

Course length: 2 yrs full-time

The course is two years full time and the timetable will include theory, practical and self-study sessions as well as taking part in planned hospitality events (these could take place outside timetabled sessions). As well as studying the required generic units you will have the opportunity to choose one the following specialist pathways:
Pathway One: Advanced Culinary Arts
This pathway is suitable for those who have a particular interest in the practical food and beverage area of hospitality management. Job roles may include food and beverage operations manager, head chef, executive chef, development chef.
Pathway Two: Hospitality Management with Events
This pathway would be suitable for those interested in general hospitality management, as well as events and conference management. Career paths may include management roles within hotels, restaurants and the license trade as well as that of event manager or conference and banqueting manager.

Year 1
In the first year you will study 4 generic units including:
• The Contemporary Hospitality Industry: You will investigate the nature and diversity of the hospitality and constituent industries, including a range of job roles and employment possibilities.
• Finance in the Hospitality Industry: You will develop a practical understanding of the accounting techniques used to control costs and profits and how to analyse business performance.
• Customer Service: You will gain an understanding of customer service policies and the purpose of promoting a customer focused culture. You will also investigate what skills are required to provide excellent customer service.
• Food & Beverage Operations Management: You will gain an understanding of the day-to-day activities and procedures involved in food and beverage operations, whilst developing a range of practical operational skills.

You will then have the option to specialize in year one, choosing one of the following pathways:

Pathway One: Advanced Culinary Arts
Units include:
• Contemporary Gastronomy: You will gain an understanding of gastronomy trends and developments as well as advanced skills relating to gastronomic principles within contemporary food and beverage settings
• World Food: This enables you to understand the multicultural influences and key determinants that contribute to international cuisine. You will also develop skills in preparing and cooking dishes from regions around the world.
• Planning and Managing Food Production and Beverage Service: You will gain an understanding of the dynamic environment of food and beverage delivery systems and develop skills in producing and analyzing food and beverage preparation plans.

Pathway Two: Hospitality Management with Events
Units include:
• Human Resource Management for Service Industries: You will gain an understanding of human resource management, employee relations, employment law as well as requirement, selection, training and development within the service industries.
• Conference and Banqueting Management: You will gain an understanding of the operational issues that affect the success of the conference and banqueting sector and the factors influencing its development.
• Hospitality Contract and Event Management: You will investigate contract and event management in the hospitality industry, including the diversity of the services and products as well as the factors that optimize business performance.
• Facilities Operations and Management: You will investigate the professional scope and practice of contemporary facilities management including administration and evaluation systems for effective facilities management.

Year 2
In the second year you will study 5 generic units including:
• Research Project: Develop your skills of independent enquiry and critical analysis. You will undertake a research investigation with direct relevance to your hospitality management pathway and professional development.
• Room Division Operation Management: This area of study will give you a comprehensive understanding of contemporary room division operation management and the importance of revenue management to operations.
• The Developing Manager: This unit will enable you to gain an understanding of behaviour management principles and gain skills to review management potential.
• Work Based Experience: You will experience the scope and depth of learning which can take place in a work based context by planning, monitoring and evaluating work experience.
• Menu Planning and Product Development: You will gain an understanding of menu planning and related product development as a strategic business process as well as acquiring skills in the effective implementation of new products and services.

Pathway One: Advanced Culinary Arts

• Creative Patisserie: You will gain an understanding of equipment and methods of creative patisserie work and develop professional skills in the preparation and cooking of patisserie items.

Pathway Two: Hospitality Management with Events
Units include:
• Hospitality Operations Management: You will gain an understanding of the operational and economic characteristics including product development, pricing and profitability concepts. You will also gain skills in how to analyse and improve operational performance management in hospitality.
• Sales Development and Merchandising: You will gain an understanding of both internal and external sales development techniques as well as the tools required for merchandising in a business and service context.

Construction and Project Management BSc(Hons)

Construction is now a modern, highly efficient industry which requires professionals at all levels and in quite diverse areas of expertise. Demand for graduates with specialist skills and knowledge relating to construction and the built environment is high and is likely to remain so in the foreseeable future.The BSc(Hons) course has been developed in partnership with leading organisations in this sector, so you will learn how to manage the various phases in the delivery of construction projects including feasibility, planning, design, construction and occupation.You will cover topics including construction and project management including construction technology, measurement and estimating, construction management, legislation, CAD and BIM, environmental science and regeneration and surveying and property valuation.

Facilities

There will be focus on the properties and selection of sustainable materials, and the design and management of energy efficient buildings using low carbon and renewable energy technologies. You will gain detailed knowledge in construction law and regulations, design standards, construction technology, building and engineering services, as well as health, safety and welfare.

Students taking these courses will benefit from access to the Think Low Carbon Centre on Honeywell Lane, to enhance their studies.

UCB also provides construction students with access to Computer Aided Design (CAD) and Building Information Modelling (BIM) to help students to design realistic building development projects.

Others have taken the opportunity to engage in further studies such as one of our many masters courses at the University. Recent survey results show 92% of our students in work and/or training six months after graduating (2010 graduates).
