Course overview

Whether you want to create healthy meals, learn the art of culinary quality, or gain a professional qualification to progress in the catering and hospitality industry this course is for you!

It is ideal for students coming straight from school who wish to seek a career in this industry. It is also ideal for those chefs in industry who would like to continue or refresh their knowledge by undertaking topics within the qualification.

Course content

As part of this course you will study the following topics:

  • Culinary quality
  • Kitchen operations
  • Health, safety, and security
  • Nutritional analysis
  • Food safety practices and procedures
  • Team working
  • Business, including risk assessment, waste management principles and supply chain management

Options to specialise

In addition to the core content, you will also complete one module of Professional Cookery. You will develop your understanding and advanced skills to work with the following different food groups:

  • Meat, poultry and game, including associated products
  • Fish and shellfish dishes and products
  • Vegetables, vegan and vegetarian dishes, including vegetarian protein sources and specific dietary considerations and needs
  • Dough and batter products, including fermented dough and batter products
  • Paste and patisserie products
  • Hot, cold and frozen desserts
  • Biscuits, cakes and sponges

Employer Set Project and Work Experience

In addition to developing your knowledge and understanding through completing the core elements alongside your specialism, you will be expected to complete an employer’s set project as well as 45 days’ work experience. This will provide you with the opportunity to work closely with leading employers thus developing your knowledge, skills and professional behaviours for working in the industry. In completing your work placement you’ll need a willingness to travel, on occasion this may involve two bus journeys.

You can go on to study a relevant university course or apprenticeship or go into employment in a catering and hospitality role. Due to the wide variety of skills you will acquire on the course, you could study or work in catering services management, events management, hotel management or as a specialised chef.

How much does the course cost?

Full-time students aged 16-18 do not have to pay tuition fees.
