Course overview

Our chef and front of house lecturers will develop your practical skills in food preparation, cooking and front of house operations.

Lessons take place in our industry-standard kitchens and The Open Kitchen, our restaurant, that is open to the public. Our level 2 students run the afternoon service in our Open Kitchen  restaurant gaining valuable experience at both front and back of house.

In the kitchens, our Chef lecturers will develop your skills including the preparation and cooking of meat, fish, poultry, vegetables, soups, stocks and sauces. Once you have mastered the basics, we expand your skills to look at more aspects of the industry, for example cooking for events both at college and externally. In our bakery, you will develop your baking skills looking at hot and cold desserts as well as producing biscuits, cakes and sponge products.

The course also helps you develop your understanding of catering operations alongside learning about food safety and hygiene. All students will look at healthier food alternatives and developing dishes and menus to cater for a range of dietary requirements.
